The lakes themselves are small enough you can usually scout the entire shoreline in under a minute. Approach the lake from the downwind side during drink time. I'm having the same problem. I take out the in-game camera (p) and take a couple pictures of the tracks and the mission objective does not update. I have tried on all of the human tracks I could find and at multiple angles.
