Uchigatana ds2
I have been practicing speedrunning a lot recently, and the rapier is always the weapon of choice. This makes sense for a lot of reasons; It has one of the fastest attack speeds in the game. Its damage per stamina consumption is amazing. 2h r1 spam does an incredible amount of poise damage, enough to stagger nearly any non boss in the game.
Here is some advice, assuming you know very little about the game (just in case): Don't get dex higher than 45. Endurance needs to be high for roll plenty of roll dodges. You want to be fast rolling with a dex build. Vitality is probably your most important stat besides dex, since you'll be using very little armor.
Uchigatana has really good damage output on a Dex build and will easily carry you through the game. Try to stay under 25% equipment burden if you way to stay fast and light on your feet. Tanking up in heavy armor with a high stability shield isn't a terrible strategy either, but most Dex/Uchi users are going for the stereotypical fast and light ... Hammers. Homunculus Mace is the best. Blacksmith Hammer is a close second but gets edged out due to lack of counter damage. Mace is a solid alternative before you get either one. Mace of The Insolent has natural scaling in both Lightning and Dark, but is only adequate as a melee weapon. But since it is a DEX weapon I would recommend sharp infusion and leveling up DEX. It depends on your stats. If you have high Dex you should infuse it with a sharp gem, if you have high strength maybe you should be looking to use a different weapon as it wouldn't scale very well with strength.

Main reason is that at 14str/40dex the Uchigatana has 420 attack rating and the Balder Side Sword has 379.
